Starting from longest to shortest rise time, there's the cold-fermented Neapolitan pizza dough recipe, which takes about 2 days to make; slow-rise dough that rises for 20 hours at room temperature; weeknight dough that takes about an hour from start to finish; and a 25-minute dough that calls for beer instead of yeast (click on the photos below to view the recipes). All you need to make any of these pizza doughs are:
- A large bowl
- Measuring cups and spoons
- A sturdy wooden spoon or dough whisk*
- Heavy-duty rimmed baking sheet or baking stone/steel, for baking
